Authentic Persian Flavours by Master Chef Jalali

At the heart of the kitchen is Master Chef Jalali, who has been with Takht Jamsheed for years and is renowned for his passionate efforts in preserving the authenticity of Iranian cuisine while making it approachable. His cooking leans on tradition, yet it always feels fresh. 

The Chelo Kabab Kubideh Zaffarani, featuring juicy skewers of lamb served with saffron-scented rice, is one of the dishes that regulars never tire of. Then there’s the Baghali Polo Ba Mahicheh, a lamb shank with dill and broad bean rice that tastes like a slow-cooked family recipe passed down through generations.

For newcomers, starting with a Salad Shirazi or a Pish Ghazaye Mitra is always a good idea. It is light, refreshing, and the perfect contrast to the richness of the mains. 

Those who like to try something different should not miss the Loghmeh Saffarani. This dish combines grilled lamb with pistachio, walnut, and sesame, layered with herbs and spices that create a flavour profile that lingers long after the last bite. The indulgent Siniye Ramsar highlights the richness of Persian culinary tradition.
