Beginning his journey in the kitchen at the young age of 18, SUSHISAMBA Bahrain’s Chef Sergio Galaz has lent his name to several restaurants in Mexico City, Doha, Turkey and now in Bahrain. Chef Galaz brings 22 years of culinary experience, inspired by cuisines from different cultures that he credits to fuelling his meteoric rise in the global F&B industry. Now, a resident of Bahrain, Chef Galaz is spearheading the Japanese-Brazillian-Peruvian restaurant at the Conrad Bahrain Financial Harbour.

In this exclusive interview, Chef Galaz spoke to us about what he believes makes restaurants special, his recommendations at SUSHISAMBA Bahrain, and a sneak peek into what’s in store for diners at the restaurant.

What, in your opinion makes a restaurant special?

Having worked and travelled to so many different countries, I have witnessed how restaurants have evolved through time. The trends nowadays are far too different from what it used to be before. However, one remains true and the same. Restaurants offer a unique experience to diners because we are not just serving food but also the idea of how we eat food. It is a chance for the diners to experience the Chef’s creativity and the pleasure of being served with one-of-a-kind creations from the chef’s imagination. As a Chef, I take pride in all the food that I make and I am happy to share a piece of myself with my diners.


Where do you seek inspiration from while coming up with ideas in the kitchen?

Working with Latin cuisines, I take my inspiration from my Mexican culture and our family ideologies on how good food should be prepared. For me, good food should be simple but heart-warming just like how food is served at our family’s table. The flavour should speak for itself and make people see through the eye of the one who prepared it. This is where I got my inspiration and the desire to share it with the world in every kitchen I’ve worked.


Can you give us a sneak peek into any upcoming dining experiences that guests can look forward to at your SUSHISAMBA Bahrain?

New dishes and new trends are coming up at SUSHISAMBA Bahrain. Our team is very pleased and excited about the launching of our new and exciting dishes from both Japanese, Peruvian and Brazilian cuisines. We will also be introducing selections for our lunch and Canapes which we know business people from all industries will surely look forward to. Furthermore, our New Year and Christmas menu is ready to greet the season. We have prepared all of these to ensure the ultimate SUSHISAMBA experience and we have more surprises up in our sleeves.


What’s the one ingredient you wouldn’t let go from your kitchen?

My Team. They are the heart of our service and the engine that drives our operation. Every single one of them is important and plays their role like a well-oiled machine. In the time that we have worked together, my team has developed that sense of teamwork, respect and discipline that has brought flawless success to our daily operation, creating unforgettable experiences for all our guests and diners.


If you could recommend 3 dishes to your diners, what would they be and why?

Samba Manama – All locations have the special signature SUSHISAMBA rolls from SUSHISAMBA Bahrain. One key ingredient coming from Bahrain’s local market is the Dates which embodies the rich culinary traditions of the Arabian Gulf. Samba Manama is beautifully presented, with vibrant colours and an appetizing arrangement that can make it a standout dish on any menu.

Ceviche and Anticucho – The dish showcases the Peruvian culture and offers diners an opportunity to explore authentic Latin American flavours and cooking techniques, providing a unique dining experience. The vibrant presentation of ceviche and the appetizing grill marks on anticucho enhance the visual appeal of these dishes, making them enticing options for diners.

Moqueca Mista and Churrasco Rio Grande – These dishes bring a taste of Brazilian culture and culinary tradition to the table, offering a unique and flavorful dining experience that is sure to delight and impress diners. The variety of meats and cuts ensures that there is something for everyone, making it a satisfying option for groups and meat lovers.
