With a background in hospitality spanning Egypt, Kuwait, Saudi Arabia, and Oman, Assem Mahmoud brings a wealth of experience and a fresh perspective to Bahrain’s vibrant Food & Beverage sector. The new Director of F&B at The Diplomat Radisson Blu Hotel Residence and Spa shares his insights on what makes a restaurant truly special, his plans for the hotel’s dining outlets, and his journey through the hospitality industry. Explore all that defines The Diplomat Radisson Blu’s culinary offerings in this exclusive interview.
In your opinion, what makes a restaurant special?
When it comes to making a restaurant special, exceptional food quality plays a significant role, along with superb service and hospitality. These elements combined can create a unique dining experience. Additionally, the design of the menu can set you apart from the competition and entice customers to choose your restaurant. Including mouthwatering photos and creative food and descriptions can make your menu instantly appealing to customers.
Maintaining cleanliness and hygiene is crucial. Guests will not dine in a restaurant that appears unfair or neglected. Alongside regular cleaning tasks like wiping down tables and disinfecting counters multiple times a day, attention should be paid to smaller details if you truly want to impress the guests. Ensure that menus, chairs, salt and pepper shakers, condiment containers, ice machines, snack bowls, and light fixtures are kept clean. Neglecting these areas can tarnish your restaurant’s reputation.
In the new role – Director of F&B, what are some of the concepts you plan to introduce to restaurants at the hotel?
We are currently in the process of opening a new outlet called SOL Lounge. This establishment will offer a pool view, making it the perfect spot to enjoy watching sporting events. Additionally, live entertainment, brunches with various themes, and DJ nights will be featured at SOL Lounge. The Lounge is designed to provide a casual dining experience throughout the day. As for our existing outlets, we are continuously introducing monthly promotions that align with each outlet’s concept. For example, BO.SABI will host a Sushi Night, and we will also offer weekly brunches at our other outlets. These promotions aim to enhance the overall dining experience and cater to the preferences of our valued guests.
How do you ensure your restaurants always meet the highest standards?
Adhering to food safety practices, maintaining cleanliness, using quality ingredients, offering a varied menu, creating a pleasant ambience, and providing friendly service are essential standards for a restaurant to ensure a positive dining experience. These practices include teaching correct hand-washing techniques to all staff members and keeping food preparation areas clear and clean. Quality ingredients greatly impact the food’s overall quality, while a varied menu with options for dietary restrictions enhances customer satisfaction. To improve the guest experience, focus on creating a comfortable dining space with careful table settings and subtle background music. Additionally, ensure that all front-of-house staff serve customers quickly, efficiently, and with a friendly demeanour.
What are your thoughts on Bahrain’s F&B sector?
Bahrain’s Food & Beverage sector thrives, showcasing the Kingdom’s cultural heritage and global influences. With a diverse range of cuisines, it exemplifies Bahrain’s status as a cosmopolitan hub in the Gulf region. The sector benefits greatly from the strong support of the Ministry of Tourism, which is evident in the multitude of restaurants operating with unique concepts and offerings.
Tell us about your journey in the hospitality industry and how it led you to The Diplomat Radisson Blu Hotel, Residence and Spa.
I studied tourism and hotel management in Egypt. While studying, I gained practical experience by working in various hotels and restaurants. After completing my college education, I began my professional career in El Gouna, located in southern Egypt. I had the opportunity to work in different hotels and restaurants in that area. In 2017, I decided to explore new opportunities and travelled to Kuwait, where I joined a well-known hotel and worked there for two years.
Seeking further growth, I then joined Radisson Hotels Group’s five-star property in Jeddah, Saudi Arabia, where I spent two and a half years, expanding my skills and knowledge. Following my time in Jeddah, I moved to Muscat, Oman, where I joined a prominent hotel.
I spent three years there, gaining invaluable experience and further honing my expertise in the field. Seeking new challenges, I then relocated to Bahrain and joined The Diplomat Radisson Blu Hotel, Residence and Spa. Throughout this journey, I have continuously learned and acquired a wealth of experience, allowing me to develop a comprehensive understanding of the hospitality industry.
What are your favourite places to eat in Bahrain?
I spend most of my time dining here at The Diplomat Radisson Blu Hotel, Residence and Spa and relishing the diversity of cuisines: International, Mediterranean, Asian, and Italian. Outside of the hotel, my favourite place to eat is Furn Bistro & Bakery at The Westin Bahrain City Centre.
