Why the Egg Is Having Another Moment

With grocery bills climbing, home cooks are rediscovering that a carton of eggs sitting in the fridge door can become dinner in ten minutes flat. Eggs travel across cultures beautifully, sitting just as comfortably alongside Arabic flatbread and labneh as they do over jasmine rice or inside a warm pita.

The ten-minute egg rice bowl: Warm leftover rice in a pan with a splash of sesame or olive oil. Push it aside, scramble two eggs in the same pan, then fold everything together. Top with soy sauce, chilli crisp and sliced spring onion.
